Works under the direction of the Food and Beverage Manager and when required the Executive Chef. Responsible for the front of the house operations of the Silver Platter and NY Deli on all levels. Must be able to work varied and extended hours to include holidays, weekends, evenings and special events. Responsible for the training of the trainers. Reports progress on a regular basis to the Food and Beverage Manager.




Responsible for personnel functions to include hiring, training, performance evaluations, disciplinary actions and asset preservation. Schedules personnel and works with the culinary team to develop creative food and beverage specials to maximize value and profitability with approval from the Executive Chef and Food and Beverage Director. Oversees Supervisors and fills in when necessary. Is responsible for implementing training for their department as well as providing accountability on all approved standard operating procedures approved by the Food and Beverage Director. When directed by the Food and Beverage Manager, will supervise special events and perform other related duties as required. Must be familiar with various computer generated reports and must be able to evaluate them to maximize revenues in the department. Knows all pertinent health and safety laws as required in the operation of the food facility. Informs subordinates on changes to the policies and procedures of the Casino and Food and Beverage Department. Communicates with the other departments to coordinate activities and promote effective interdepartmental relations. Must be able to fill in and oversee other areas of the Food and Beverage operation based on direction from the Food and Beverage Manager.




  • Must exercise good judgement as errors could prove costly to the food facility.
  • Responsible for maintaining the highest level of customer service.
  • Must have a valid food handler certification and HACCP, DRAM Shop training.
  • Must be in compliance with pertinent OSHA safety regulations for job position.
  • Minimum of two years’ of restaurant management in comparable company.
  • Must be able to obtain and maintain State/Tribal License (including extensive background check).
  • Must pass pre-employment drug test.
