Job Description

JOB SUMMARY

 

Under the direction of the Production Lead and  Sushi Sous Chef, this position's primary responsibility is to assist the Production Lead and  Sushi Sous Chef in the Sushi Kitchen, on the line, and in the producing and preparing of all menu items as per specifications and recipes.

 

EDUCATION AND EXPERIENCE:

 

This position requires a minimum of one year experience in a  Sushi Kitchen and Food Preparation.  Experience in high a volume operation or casino is preferred.  Candidate must have experience in the following production along with various traditional Asian dishes:

 

Rice

Maki

Sashimi

Nigiri

 

JOB COMPLEXITY:

 

Prepare all menu items according to Fort McDowell Casino's specifications.  Must be knowledgeable of Department of Health requirements in order to ensure compliance with all applicable codes and regulations.

 

ACCOUNTABILITY:

 

Follow procedures in order for Fort McDowell Casino to run a financial successful business.  This is done by portion control, waste control, and product rotation.  The successful candidate must ensure Fort McDowell Casino is in compliance with all applicable health department codes and regulations.  The candidate must have a valid Food Handler's Certification and HACCP Training.

 

WORK CONDITIONS:

 

While performing the duties of the job, this employee is required to and may be:

 

  1. Exposed to dust/smoke and work in hot/cold temperatures for 34-66% of the work day.
  2. Balance, bend, crouch, use a ladder, reach stoop, twist, and walk for 34-66% of the work day.
  3. Eye/hand coordination, handling and wrist motion 34-66% of the work day.
